— An update on our report last week on Little Rock’s first Panera Bread Co. outlet, coming soon to the Pleasant Ridge Town Center, 11525 Cantrell Road, Little Rock: Renee Eifert, director of marketing for Oklahoma City Bakery, the regional Panera Bread franchise group, confirms the Cantrell Road location and an August target for opening.

She also said contract negotiations are under way for a second location “further south” that would open before the end of the year. Though she wouldn’t specify the site, that corresponds to reports we’ve received of a possible Panera Bread going into the Shackleford Crossing center at Interstate 430 and Shackleford Road. And she also said the franchisee has plans for a third location to open in 2009 and a fourth in 2010. We’ll keep you posted.

Fatboys Killer BBQ No. 2 will open sometime in mid-May in the former Hog Diner, next door to the Harley-Davidson dealer, 10208 Interstate 30, Little Rock, an offshoot of the popular barbecue joint in Landmark. Owner Mike Brewer says hours will likely be 11 a.m.-4 p.m. Monday-Saturday. The place doesn’t yet have a telephone number.

Owners Paul and Dana Riggi, citing a family emergency back in New York, hastily closed Scapetto’s Deli last week in the River Market’s Ottenheimer Market Hall, 400 President Clinton Ave., Little Rock. The Riggis took the place over in December from founder Jimmy Scapetto.

Rick & D’s Fisher’s Cafe, 1919 E. Broadway, North Little Rock, served its last meal last Friday. The place for years had been Roy Fisher’s Steak House; Roy, son of the restaurant’s namesake, Roy “Cuz” Fisher, and his family retired in March 2005and Richard and Delana Green kept it running for three more years.
